Folate is the natural form folic acid is man made. More and more we are learning man made nutrients are toxic to the body and folic acid is no exception It can even damage infants in the womb. It increases the risk of cancer. It can interfere with MTHFR enzymes. The list of health problems it cause goes on and on. It can even mask when someone have a vitamin B12 deficiency.

Most products that contain wheat or some other form of flour are fortified with folic acid. That bread may look tasty but as you learn you will see it may be causing many health problems.

Because people are figuring out how toxic it is they are changing the labels on food. Folic Acid will now be listed as DFE. Folate needs magnesium to work. It is very important to know the difference between folate and folic acid. Folic acid is found in foods that have been fortified and many vitamins contain the toxin.

Because of the ill health effects of folic acid most of Europe will not fortify food with it. Now combine that with the toxin glyphosate which contaminates most of our foods.

Our body produces a very limited amount of the enzyme needed to break down folic acid. It get depleted pretty quickly. Now at to that fact that our gut bacteria also have a limited ability to break down folic acid. This causes it to build up in the blood causing health problems.

Long John Silver’s like breading for fish.

Since fast food has so many toxins and are loaded with GMOs and Glyphosate I decided I would figure out the recipes to my favorite fast food restaurants. I think I knocked it out of the park with this one it taste just like LJS breading to me. Many fast food places have closed and they just cannot figure out why people are no longer eating there. Well it is a good thing because people are learning to cook for themselves again. The fast food has so many toxins and chemical additives now they no longer taste as good as they used to. I remember what they used to taste like and I am trying my best to figure out how they make them so I can enjoy the way it used to be.

Long John Silvers like breading.

Make sure you use organic. If you do not know why look at my post on GMOs and glyphosate. Very bad for the body.

1/8 Cup of corn flour

1/8 Cup of Spelt flour.

You can just use ¼ cup of regular flour in place of the other flours , I use those more for the golden color they give the breading.

1 ½ cup of wheat flour

2 Tablespoons of some type of starch.

¼ TSP of baking soda

¼ TSP of baking powder.

1 Teaspoon of honey

½ TSP of onion powder

½ TSP of garlic powder

1 cup of buttermilk. If you do not have buttermilk then you can add a tablespoon of vinegar to regular milk and use it. You may need more or less milk I am guessing on this part because I do not use measuring cups when I cook.

Mix the dry ingredients well then add the milk and blend together mixing it very good.

Dip the fish in the batter and let it set on a cookie sheet for about 20 minutes. Then deep fry until the fish starts to float. If you over cook it , it will get gooey. So when it is golden brown and starts to float it should be done. It does not take fish long to cook just a couple of minutes.

Pull fish from grease when fully cooked and place on a wire rack to drain the grease.

Please use organic, many herbicides and pesticide are very damaging to the body. Also GMO products contain BT Toxin which has been found to cause the body to react the same way it would if you have food poisoning. If you ever ate something and it felt like a brick sitting in your stomach you have been damaged by GMOs and the BT Toxins. They can inhibit bile production and so can the glyphosate or glufosinate they spray on them.

2/3 tsp salt

1/16 tsp dried thyme

½ tsp dried oregano

1 tsp celery salt

3 tablespoons black pepper

1 tablespoon dried mustard

3 tablespoons paparika

2 tablespoons garlic salt

1 tablespoon ground ginger.

Place spices in food processor until ground up fine.

Combine 1 cups flour , ½ cup spelt flour, ½ cup masa harina. You do not have to use the other flours you can just use two cups of flour instead but I found adding those flours made it crispier.

combine and mix 1 egg with 2 cups of butter milk. Beat them until blended well. If you do not have butter milk I have added 2 tablespoons of vinegar with regular milk and got the same results.

Add egg and milk to flour spice mix and stir very well

dip chicken in mix then set on cookie sheets for 20 minutes to let the breading dry a little.

Throw in deep fryer. When you see very few bubles it is time to remove them from the grease. Set on a rack to drain the grease. I found when you set them on a plate with paper towels the breading on the side that is facing down does not get crisp.

Ok now for the information. One mistake people make if their histamine levels go up when they take a probiotic they panic. When you first take a probiotic it sends out a molecule to tell your body to produce histamines. That makes the mucous membrane more porous. It does this so it can enter and establish itself in the mucous membrane. Once it is in and has set up camp it will continually send out a molecule telling the body not to produce too many histamines so it does not kill the good gut bacteria. So initially histamines will rise for a day or two then after they are established they will drop back down. You may bloat when you first take probiotics. It is best to alternate the types you take or you will develop gut dysbiosis. That is as bad if not worse then having Candida. Your gut bacteria keep your bladder and digestive system acidic. If it becomes alkaline which is usually caused by high ammonia levels in the body. High ammonia levels can be a result of inhibited sulfation or having too many sulfur digesting, methane producing bacteria. High ammonia levels can also be the result of high endotoxin or afloxin levels. I experienced Candida and dysbiosis . I found grapefruit seed extract helped a lot. But you can only take it for a few days and you cannot take it more then two days a week because it inhibits cytochrome P450 enzymes. Yogurt , fermented foods and aged meets should be avoided they have histamine producing bacteria in them and will raise histamine and inflammation levels. Once you get things straightened out you can eat those. I take 3 days a week where I do not take any probiotics to prevent dysbiosis. Some Probiotics that reduce histamines.

Many toxins in our foods especially BT Toxin, glyphosate and glufonisate can inhibit FUT2. This is an enzyme that we secrete that keeps our gut bacteria healthy. Candida Myths busted.

There are many myths about candida for example you should alkalize the body to fight it. If you do that you will feed it and many other pathogens. Our bladder and digestive system is supposed to be acidic. When you alkalize them which is very hard then you would be feeding candida. When we get high ammonia levels from metabolic issues or from gut dysbiosis it alkalizes our bladder and digestive system causing candida to go from a friendly fungus we need to a pathogenic form. Yeast Less Pizza Crust or Bread Recipe.

IMG_20180610_152733I was looking for a yeast less pizza crust recipe and did not find any that worked very well. Something is different about the yeast now days and when you make dough with the new yeast the product comes out tasting very yeasty. So I decided to make my own recipe. It works pretty good but comes out gooey and can be difficult to spread. I used all organic products because most now days know the harm GMOs and glyphosate will do to our bodies. I gave instructions on how to make it into bread instead of crust in the ingredients list.

To spread the dough I use wax paper that I have dipped in olive oil. It makes spreading it much easier. You can also make bread from this recipe by doubling the amount of baking soda.

2 teaspoons of olive oil

4 cups of organic flour

½ teaspoon of baking soda. To make bread instead of crust increase baking soda to 1 teaspoon.

1 ½ cups of sour milk or yogurt

1 large egg.

mix the dry ingredients and then the oil first, then add the milk or yogurt. Grease or oil a pizza pan or cookie sheet. Place the dough in the center of the pan or cookie sheet and spread with wax paper dipping it in olive oil. It makes the dough very easy to spread.

Preheat oven to 425 cook for 10 to 15 minutes until the bottom of the dough just starts to brown. Then remove from the oven and add the toppings. Place back in the oven it will brown the rest of the way as the toppings are cooking. If you cook it too long in the first step it will come out hard.

The only problem I have with this recipe is it does shrink but it taste great.

I really cannot give the recipe for the sauce because when you buy tomato sauce and even the tomatoes I can, can have a different level of acidity. I make half from crushed tomatoes and half tomato sauce. I add oregano, basil, parsley, black pepper, salt, majoram and honey to taste. If you add sweet peppers you do not want to sweeten it because the peppers will sweeten the sauce up.

This is what the bread looks like made from this recipe. I added 1/2 cup extra of flour when I made bread. The bread comes out a little dense. I wonder if I added a little vinegar if it would come out less dense.

This is about the gluten free chocolate cake mix that I purchased from http://www.nuts.com . It was fantastic. I loved it, it taste great. I cooked it too long because I forgot about it and it still came out moist. You could not tell it was gluten free. As with all gluten free products they tend to fill your belly quick so if you are eating it for desert you may want to eat a small piece or you will really be stuffed.  So here is the recipe I used to make mine.

2 3/4 Cups of cake mix.

1/2 Cup of butter.

1 Cup of milk.

1 Teaspoon of lemon juice.

2 Large eggs.

1/3 Cup of warm water.

2 Teaspoons of vinilla.

Mix all the ingredients until there are no lumps. Lightly oil a  12 inch by 9 inch pan pour the mix into the pan. Preheat oven to 350 degrees, then place in oven. Not sure how long to cook it but to check it poke a tooth pick in the centre when only a little cake sticks to the tooth pick it is done. Keep in mind that cake cooks for 5 to 8 minutes after you remove it from the oven so if you cook it all the way and don’t leave time for that you will get very dry cake.

  Unless I state otherwise all the premixed flours will be from http://www.nuts.com.  I love pancakes and missed them very much.  Needless to say I was kind of sceptic of ordering gluten free pancake mix but decided to give it a try. I have to say I was very surprised by the taste, they were the best pancakes I ever tasted. The were better then regular pancakes. There is another positive they filled me up a lot quicker. I usually eat three plate sized pancakes but I cannot do that with these. They fill me up a lot quicker, I can barely get one plate sized pancake from these in me and I am stuffed. What I am finding about these gluten free products is I seem to get more energy and I can actually feel my body getting nourished by them.  I am always sceptic of anything and thought it was a bunch of hype when people have said that but it is not an exaggeration. I will put the recipe for the pancakes first then the waffles. Something I have learned is that the gluten free products fill you up a look quicker so make less then you usually do.

1/8 Cup of milk, if you like them thicker use less.

1 Table spoon of oil.

Mix ingredients preheat the griddle cook and enjoy.

As I stated in my other post http://www.nuts.com does not put the recipes on how to prepare their mixes on the packages , you have to go to their website to find the recipes. Note to keep in mind, nuts.com has their recipes incorrect the amount of liquid on their site is way to high and you will ruin your recipe if you use the amount they state. I never made homemade bread before so mine came out like fruitcake. I have learned and will give it another try someday. So here is the recipe.

1 Cup of warm milk which was still too much, I suggested adding the liquid a little at a time until you get the desired consistency for the dough.

3/4 Cup of egg.

1/4 Cup of oil of your choice.

1 Package of yeast or 2 1/4 teaspoons.

1 Teaspoon of vinegar.

1 Pound of bread mix.

Mix ingredients well put in bread pan and let rise then place in oven preheated to 350 degrees. Bake for 30 to 35 minutes. If you like you bread crust softer rub with oil, I rub mine with ghee because it is very nutritious and good for your health in so many ways.

  When you make anything from nuts.com keep in mind that all the recipes are on their website they don’t put them on the packaging. They do package them very well though.  As stated in my previous post do not put the amount of water that they have stated on their website it is too much and you will ruin your recipe. What I found worked best was to cut the amount of liquids they called for in half. Sometimes that was to much so I would add a little of the liquid at a time until I got the desired consistency.

So here is my modified version of their recipe:

   1 Pack of yeast , combine it with 1 cup of warm water and let stand.

   2 Large eggs

   2 Tablespoons of cooking oil of choice.

   3 1/4 cups of pizza crust mix.

   Combine the eggs and oil and mix them, then add to the pizza crust mix.  Then add the water with the yeast. Then mix, once you have it mixed split it in half and let sit for twenty minutes if you are making two 9 inch pizzas or if you are making one 16 inch pizza just let it stand for twenty minutes.

I had no problem with it sticking and all I did was use a paper towel with some oil to grease the pain before I put it on. If you have trouble spreading the dough out in your pan put a little cooking oil on your hands.  Do not put the toppings on it put it in the oven and cook it first.

They said to set the oven for 375 degrees but I set it for 350 and it came out fine. The recommended time to cook is 7-9 minutes. I like mine a little crisp so I left mine in for nine.

Take the crust out after 7-9 minutes and add your toppings. Then put back in oven. Keep a close eye on it because it doesn’t take it long to cook once you put the toppings on and put it back in the oven.

 Genetically Modified Food (GM)

 You are probably asking yourself why am I talking about GM products when the blog post is about gluten free and organic? It is because I have Lyme so I have been having a Bad reaction to the GM (Genetically Modified) foods. So I started researching them to see what could be making me have such a bad reaction. When I would eat them my stomach would bloat, I would get muscle spasms, cold sweats and a headache that was out of this world. GM foods are designed to produce herbicides and insecticides. So when you consume GM foods you are consuming those things. I did not realize it until I got Lyme and became very sensitive to GM foods. You have to look at it this way. Would you take a glass and drink the pesticides a farmer is spraying on his field?  Or would you dip a spoon in Round Up (Glyphosphate) and eat it? That is exactly what you are doing when you eat GM products.  That have used things called plasmids to introduce genes into the plants so that they will produce these compounds while they are growing. Since the compounds are now in the genes of the plants they will contain those compounds.  It is known that these plants have ill effects. As a matter of fact to protect the companies financially the government passed a billed called the Monsanto Protection Act. It protects the GM food producers from laws suits and legal actions. So you cannot sue them for the ill effects they have.  The other toxin that is contained in GM products is BT Toxins. (Bacillus Thuringiensis)  . Now any animals that consume these foods will most likely contain these toxins. For example if a chicken eats corn raised from GM feed ti will probably contain those toxins in the eggs. No matter what their studies say they cannot convince me otherwise because I have to severe of a reaction to GM products even meat that has been raised with them. Organic And Gluten Free

  In order to avoid the toxins in the GM foods you will need to make sure that the food you purchase is organic. In order for it to be USDA certified organic it cannot contain any GM products from growth to the table. The reason I mention the gluten free is because I have not found any flour that is organic that is made of wheat so far. I have only found gluten free flouers. That is where http://www.nuts.com comes in.

Why I Chose To Write About nuts.com

  I chose to write about http://www.nuts.com because at the time of writing this article they have the best priced and the tastiest organic and gluten free foods. They have a pretty good selection of premixed stuff also like cake mixes , brownies, and pancake mix etc. The one thing I noticed about nut.com is that you have to go to their website to learn how much liquid to put into their flours. The recipes are not on the packages they are listed on their website. I will warn you and please read this because if not you will waste your flour. All their recipes tell you to put the wrong amount of liquids in them. Cut the amount of liquids that they state in at least half do not add the amounts they say or you will ruin your recipe.  Even cutting it in half was to much sometimes so I got in the habit of adding my liquids a little at a time until I got the desired consistency.

  I tried their brownie recipe first. I found it to be very tasty but it was like eating puddy because I added the amount of liquid they called for on their website.  The next one I tried was their pancake mix. I found it to taste better then regular pancakes which was a pleasant surprise.  Then I tried the bread. It had the consistency of fruit cake. I think that was my fault though because I have never made homemade bread and it would not rise. If I am successful I will post the recipe on here. I tried their pizza crust and it took less then half the water they stated to make their recipe. It tasted very good when I first made it. It makes two 9″ pizzas or one 16″ pizza. It tasted very good the first day but when I reheated it the second day it didn’t taste very good and developed a gritty texture.

  One more final warning. The gluten free and organic food fill you up a lot quicker. For example. I usually eat three plate sized regular pancakes. I can only eat one plate sized gluten free pancake and it really fills me up. It is a lot tastier also. The gluten free products are very high in protein.
