Graham crackers

I live in an area that is pretty backwards. Most in my area are clueless how toxic GMO foods are. If I want something organic I have to make it myself , the nearest store that would carry things like organic graham crackers is about 50 miles away. I seen a friend post an awesome recipe that required graham crackers. I will post the recipe on here if it works out.

I did not have graham flour so I used regular flour even though the recipe called for graham flour. The did not taste too bad. I over cooked the ones in the picture a little too much. The recipe said to cook them 15 to 18 minutes. I should have cooked them for 15 minutes.

10 Table spoons of butter.

1/3 cup of brown sugar.

1/3 cup of honey.

1 Large egg

1 Teaspoon of vanilla extract.

2 cups of graham flour, you can use unbleached if you do not have graham flour.

¾ cup of unbleached flour.

¼ cup of cornstarch or arrow root flour

¾ Teaspoon of baking soda.

½ Teaspoon of salt.

Mix the butter and brown sugar together until creamy. Then add the rest of the wet ingredients and mix well.

Mix the 2 cups of flour saving the ¾ cups of flour for after you have mixed the 2 cups of flour and other dry ingredients. Then as you mix it add the ¾ cups of flour until it can form a ball that is not sticky to the touch. You may not need all the extra flour I had some left over.

Roll dough to 1/8 inch thick. You can get rolling pin rings that will help to get the correct thickness but I cannot afford them. Use a cookie cutter to cut them to desired size. I had to use a canning jar lid but it worked fine. Make sure you poke holes in them. I used a fork. This prevents them from bubbling up.

Preheat the oven to 350 degrees. Bake about 15 to 18 minutes. Mine only took 15 minutes.

Acorn Flour Cookies and Acorn Coffee.

These are good cookies i loved them. I put peanut butter on the cookies but you could put it in them. I used a coarser flour for these ones and they seemed too gritty. I wanted to see how they tasted with a coarser flour. Grinding the flour so it is finer seems to give you more flavor. These come out with a slight chocolate like taste.

2 Cups Acorn flower – finely ground and sifted of any impurities for a smooth chocolate or more coarse for a nutty texture. Dry roast it on a cookie sheet in the oven at 200 until dark almost chocolate colored. I heated the flour I made the cookies in the pictures from for too long and they came out with a slight bitter taste. They taste better if you roast them a little lighter.

½ cup of honey or other sweetener.

½ cup of peanut butter.

2/3 cup of coconut oil, ghee, butter or another kind of fat. If you use the peanut butter in the cookie instead of on it then use a little less fat.

Just a dash of sea salt.
Combine sugar, milk and the fat source you have chosen in a pan along with the salt and if you choose to put the peanut butter in the cookie instead of on it then also put it in the pan. Cook on low heat until the moisture is gone then add the flour you roasted and stir. When mixed well use a tablespoon to drop onto a greased cookie sheet. Refrigerate , I hope you enjoy them.

Acorn Coffee.

 

To make the coffee grind some nuts up in a coffee grinder then put on a cookie sheet and roast them in the oven on 250 until they are brown for light coffee. For a stronger coffee roast them at 300. I do not know the timing because I go by sight. The coffee in the picture is a light coffee. It has a slight nutty flavor.

Long John Silver’s like breading for fish.

Since fast food has so many toxins and are loaded with GMOs and Glyphosate I decided I would figure out the recipes to my favorite fast food restaurants. I think I knocked it out of the park with this one it taste just like LJS breading to me. Many fast food places have closed and they just cannot figure out why people are no longer eating there. Well it is a good thing because people are learning to cook for themselves again. The fast food has so many toxins and chemical additives now they no longer taste as good as they used to. I remember what they used to taste like and I am trying my best to figure out how they make them so I can enjoy the way it used to be.

Long John Silvers like breading.

Make sure you use organic. If you do not know why look at my post on GMOs and glyphosate. Very bad for the body.

1/8 Cup of corn flour

1/8 Cup of Spelt flour.

You can just use ¼ cup of regular flour in place of the other flours , I use those more for the golden color they give the breading.

1 ½ cup of wheat flour

2 Tablespoons of some type of starch.

¼ TSP of baking soda

¼ TSP of baking powder.

1 Teaspoon of honey

½ TSP of onion powder

½ TSP of garlic powder

1 cup of buttermilk. If you do not have buttermilk then you can add a tablespoon of vinegar to regular milk and use it. You may need more or less milk I am guessing on this part because I do not use measuring cups when I cook.

Mix the dry ingredients well then add the milk and blend together mixing it very good.

Dip the fish in the batter and let it set on a cookie sheet for about 20 minutes. Then deep fry until the fish starts to float. If you over cook it , it will get gooey. So when it is golden brown and starts to float it should be done. It does not take fish long to cook just a couple of minutes.

Pull fish from grease when fully cooked and place on a wire rack to drain the grease.

Please use organic, many herbicides and pesticide are very damaging to the body. Also GMO products contain BT Toxin which has been found to cause the body to react the same way it would if you have food poisoning. If you ever ate something and it felt like a brick sitting in your stomach you have been damaged by GMOs and the BT Toxins. They can inhibit bile production and so can the glyphosate or glufosinate they spray on them.

2/3 tsp salt

1/16 tsp dried thyme

½ tsp dried oregano

1 tsp celery salt

3 tablespoons black pepper

1 tablespoon dried mustard

3 tablespoons paparika

2 tablespoons garlic salt

1 tablespoon ground ginger.

Place spices in food processor until ground up fine.

Combine 1 cups flour , ½ cup spelt flour, ½ cup masa harina. You do not have to use the other flours you can just use two cups of flour instead but I found adding those flours made it crispier.

combine and mix 1 egg with 2 cups of butter milk. Beat them until blended well. If you do not have butter milk I have added 2 tablespoons of vinegar with regular milk and got the same results.

Add egg and milk to flour spice mix and stir very well

dip chicken in mix then set on cookie sheets for 20 minutes to let the breading dry a little.

Throw in deep fryer. When you see very few bubles it is time to remove them from the grease. Set on a rack to drain the grease. I found when you set them on a plate with paper towels the breading on the side that is facing down does not get crisp.
